Pita bread spelt

6 pieces

Supplies:

  • Big bowl
  • Food processor with dough hooks (or do like me with your hands)
  • Wet kitchen towel
  • Rolling pin
  • Oven grid
  • Baking paper

Ingredients:

  • 250 grams whole grain spelt flour
  • 160 ml lukewarm water
  • 2 tbsp olive oil
  • 3,5 gram yeast
  • Pinch of salt
  • Spelt flower for pollinating

Procedure:

  • Put the spelt flour together with the yeast and salt in the large bowl and mix it well. (Use the bowl of the food processor if you use it).
  • Also pour 2 tbsp olive oil with the flour and now little by little the lukewarm warm what matters. You want to have a firm, somewhat sticky dough when the dough is well mixed.
  • Then take the dough out for a while. Sprinkle it with some of the flour, put the dough ball back in and put the dough under a wet kitchen towel in a warm place. Let the dough rise for 1 hour.
  • Remove the grid from the oven.
  • Preheat the oven to 180 degrees.
  • When the dough has risen and has become quite fluffy, knead it with your hands.
  • Ver part in 6 equal pieces and make balls of it.
  • Sprinkle the worktop with some flour.
  • Place a ball of the dough on top and rub the rolling pin with flour. Or cover it with cling film. Roll the ball of dough into a flat bun about 1 cm thick.
  • Place baking paper on the grid and place the pita breads on it. Now slide the oven rack into the preheated oven and bake the pitas in about 15min until golden brown and done. The pita breads are cooked when they start to bulge and are nicely browned.
  • Let them cool for a while and only then cut them open.
