Zucchini soup with salad and dressing

Supplies:

  • Blender (I use the NINJA blender myself)
  • Kitchen knife
  • Soup pan
  • Ladle
  • Immersion blender

Ingredients:

  • 6 zucchini
  • 2 medium onions
  • 4 cloves garlic
  • 1 tbsp olive oil
  • 4 tsp vegetable stock vegan
  • 1,3 ltr water
  • 1 bay leaf
  • Salt and pepper

Procedure:

  • Put the onion and garlic in large pieces in the blender and grind into a finely chopped mixture.
  • Fry this mixture in the soup pan in the oil.
  • Meanwhile, cut the clean-washed zucchini.
  • Put the coarse pieces in the blender and grind into a finely chopped mixture. Add this mixture to the fruited onion and garlic. Add the broth spices.
  • You keep stirring this porridge until you see that it is being cooked.
  • Add water until you think there is enough in it, bring it to a boil, remove the pan from the heat and make everything fine with the hand blender.
  • Then add the bay leaf and let the soup cook gently over low heat until the leaf is soft.
  • Then season the soup with salt and pepper.

Salad:

Cucumber, point pepper, pickle (without sugar), iceberg lettuce.

Dressing:

Drizzle of olive oil, 1 tbsp honey, 1 tsp coarse mustard, snack tomatoes, salt and pepper.
