Eggplant from the oven/airfryer

Supplies:

  • Kitchen knife
  • Frying pan with lid
  • Spatula
  • Come for the marinade
  • Guard

Ingredients:

  • 1 eggplant
  • Grape seed oil

Marinade:

  • 1 tbsp tomato paste (without added sugar)
  • Honey (little bit)
  • Sesame oil (little bit)
  • Vinegar for sushi (little bit)

Procedure:

  • Cut the eggplant in half, carving lines in a diamond motif on the inside of the eggplant.
  • Heat a frying pan with grape seed oil and fry the inside of the eggplant halves.
  • Once browned, it is the outside's turn. Lid on them because they need to soften.
  • When they are ready, remove them from the frying pan and cover the inside with marinade.
  • Then you put them in the oven (200 degrees) for about 10 minutes or in the air fryer for 6 minutes, check in between, because not every oven is the same and burning is a shame.

Topping:

Sprinkle with spring onion and sesame seeds.

Comments:

  • Eggplant can be very bitter, look at the bottom of the eggplant, if it has a dent then the eggplant is sweet.
  • I like to eat this all by myself, but of course you can also share it and add salad with black rice.
