Carrot soup with bread and pesto

Benodigdheden:

  • Blender
  • Kitchen knife
  • Soup pan
  • Ladle
  • Immersion blender

Ingredients:

  • Bag/bunch carrots
  • 1 medium sized onion
  • 2 cloves garlic
  • 1 stl olive oil
  • 2 tl vegetable broth vegan
  • 1,3 liter water
  • Bay leaf
  • Salt and pepper

Procedure:

  • Put the onion and garlic in large pieces in the blender.
  • Sauté the chopped onion and garlic mixture in the soup pan with oil.
  • Meanwhile, cut the clean-washed carrots.
  • Put the coarse pieces in the blender and add the mixture in the pan. Add spices to the broth.
  • You keep stirring this porridge until you see that it is being cooked.
  • Add water until you think there is enough in it, let it boil remove the pan from the heat and puree everything with the hand blender.
  • Add the bay leaf until soft. Then season the soup with salt and pepper.

Comments:

Serve with the soup (homemade) spelt bread with basil / sun seed spread.

You can easily create the spread yourself. Basil and sun seeds, salt and pepper in the blender, olive oil or sunflower oil, blend and you're done!
